VEGAN “BIG MAC”

While some McDonald’s locations serve some veggie-friendly options, it’s still not very common. There may be times when you crave something savoury and indulgent. Something like the Big Mac may come to mind; however, it’s definitely not vegan friendly.

Today, we’re going to share how you can recreate your own vegan-friendly version of a Big Mac burger at home! It’s really easy to make, and you probably have most of the ingredients in your fridge or your pantry. Let’s get into it!

INGREDIENTS

PATTIES

1 can of lentils (15 oz can)

1 cup of rolled oats

1/4 cup of chopped onions

1 tbsp dijon mustard

1/2 tbsp dairy-free mayo

1 tsp paprika

1 tsp of garlic powder

TOPPINGS

Burger buns

Romaine lettuce

Vegan cheese slices

Mayo

Piri Piri sauce

BBQ sauce

INSTRUCTIONS

Preheat your oven to 425 ºF.

Start by finely chopping the onions and lettuce.

In a small bowl, mix your mayo, Piri Piri and BBQ sauce for the topping.

Next, drain out the liquid from the can of lentils. In one bowl, combine the lentils, rolled oats, onions, mustard, mayo, paprika and garlic powder. Use a potato masher or a food processor to fully combine and blend the ingredients together.

Take about 4oz or about 1/2 cup sized pieces and form your burger patties. This recipe makes about 6 patties.

Line the patties up on a tray and let them bake for 15 minutes, or until they are solidified and brown in colour. If you want to have your cheese melted, you can also add your cheese at the 10-12 min mark.

Now it’s time to stack it up! Add the sauce mixture to the bottom bun, then place a burger patty and the lettuce on top. Next, add the second patty, lettuce and the top bun with more of the sauce on top. And you’re good to go!
