DAIRY-FREE COOKIES & CREAM ICE CREAM
One of the most loved and popular ice cream flavours is Cookies & Cream. It’s packed with amazing flavour and texture and is a great choice for those looking to have something a little extra.
We’ve been trying out some vegan and non-dairy versions in the Lost & Vegan kitchen, and today we’re sharing how you can make this ice cream flavour at home! The only tool you’ll need is an ice cream maker – any basic one will do. If not, we have some suggestions for alternatives to try.

Ingredients
1 can of coconut milk (15 oz)
1 cup of granulated sugar
1/4 cup of cashews
1 1/2 tsp vanilla
15 Oreo Thins
Steps
Start by softening the cashews by boiling them in a small pot for about 10-15 minutes.
Once the cashews are softened and cooled, combine them along with the coconut milk, sugar and vanilla in a high-powered food processor or blender.
Break the Oreos into small pieces to be added later to the ice cream.
According to your ice cream machine’s instructions, slowly add the mixture into the machine to start churning.
When the whole mixture has been added and it is starting to solidify, gradually add the broken Oreo pieces into the machine.
When fully combined, you can use the ice cream right away or put it in a container and freeze it for later.
Note**
If you don’t have an ice cream maker, you can put the mixture in a container and freeze it for 2-3 hours instead.
