EASY VEGAN VANILLA ICE CREAM

We recently did a round-up on our Instagram about some amazing spots in Toronto for vegan ice cream. With the weather warming up, it’s definitely time to start indulging a little more with some sweet treats. Today, we thought to share a simple vegan vanilla ice cream recipe that you can make at home!

The recipe is really simple. The main tool you’ll need is a food processor or a high-power blender. Let’s get into the steps!

Ingredients

1 1/2 cup of Dairy-Free Milk

1 cup of Raw Cashews

1/2 cup of Sugar

2 tbsp of Maple Syrup

2 tsp of Pure Vanilla Extract

Steps

  1. Prepare the cashews by boiling them on medium-high heat for about 10 minutes. You want to soften the cashews before blending them to prevent any clumps or bits in the ice cream mixture. When finished, drain the water and let the cashews cool down to room temperature.

  2. In a food processor or blender combine the softened cashews, milk, sugar, maple syrup and vanilla extract. Blend on high speed until the mixture is fully combined and creamy.

  3. If you don’t have an ice cream maker or machine at home, you can put the mixture in a baking tin or tub and freeze it for at least 4 hours. If you do have an ice cream machine, churn the mixture according to the machine’s instructions before freezing it in a tub. Your ice cream is good to go!
